  1. La soya se remoja unos 20 minutos, después se cuela de preferencia en una tela de tejido ralo, mantacielo, para evitarse desperdiciar la soya.
  2. En olla aparte se vierten 2 lts de agua, se le ponen la hojas de laurel, ajos, una cucharada de salsa de soya, un trozo grande de cebolla, una pizca de sal, dejar hervir por unos 5 minutos, se apaga y deja que se enfríe un poco. Lo cuela de manera que quede el agua saborizada y limpia.
  3. Añade la soya hidratada y la deja hervir otros 5 minutos, la cuela dejándola húmeda para que conserve el sabor.
  4. La salsa: Se hierven los chiles desvenados hasta que estén suaves. Aparte se asan cebolla, ajo, laurel, pimienta y clavo especificados en la receta. Separados se asan una parte de piña y jitomates. Se licuan en un medio vaso de vinagre y medio de agua, el laurel, y todo lo seco, el chile hasta que triture bien y se agrega la piña y el jitomate con un poco de agua para que no quede tan espeso.
  5. Una vez licuado todo, se cuela en un cedazo de hoyos grandecitos, Se revuelve con la soya todo, hasta que se integre bien y por supuesto se necesita una olla apropiada al volumen de comida que se elabora.
  6. A la olla le ponemos medio litro de aceite, la calentamos tantito y se vierte la soya al pastor de manera que hierva hasta que quede seca a modo que salga doradita, si quiere puede usarla por partes e irla usando a su gusto. Muévala continuamente para que no se pegue.
  7. Las tortillas deben ser frescas o pasarlas por un poquito de aceite para que no se rompan al servirse
  8. Tenga a la mano cebollita picada en trozos chicos, cilantro, limón y la salsa de su preferencia y ase trocitos de piña para adornar.
