1. "Kombu Dashi" (昆布出汁): La sopa básica de alga que se llama "Kombu". Es para disfrutar el sabor de mariscos.

    Desde derecha, la cabeza, el intestino y filete.
  3. Ocupamos solo filete.b
  4. Dorarlo ligeramente sin aceite, para para quitar el olor feo.
  5. Colocarlo en dentro de agua y dejarlo más de 30 minutos.
    Luego encender el fuego medio.
  6. Cuando se calienta, se va aparecer las burbujas finas. Es que se llama "Aku", que tiene el sabor innecesidad y el olor.
  7. Temos que quitar "Aku".
    Despúes de hervir, bajar el fuego al lento, y cocinamos unos por 1 a 2 minutos.
  8. Filtrar por un colador con la toalla de cocina.
  9. Listo!
    Es "Iriko Dashi".
