  3. No le tires el agua. Ponlo en una olla de presión y agrégale las otras 10 tazas de agua. Ponlo a cocer por espacio de 90 minutos. Hasta que esté blandito.
  4. Así está ya cocido.
  5. Lava la cebolla y rebánala.
  6. Pon 3 cucharadas de aceite a calentar y acitrona la cebolla.
  7. Lava los jitomates y pártelos en cuadros.
  8. Agrega el jitomate a dónde la cebolla. Acitrónalo.
  9. Agrega a los huachales.. Agrega la sal. Deja cocinar por unos 10 minutos. Prueba la sazón. Debe quedar caldosa.
  10. Parte el queso en cuadritos.
  11. Lava el cilantro y agrégaselo al guiso.
  12. Sirve la sopa caliente. Agrega el queso.
  13. Hoy es Miércoles de Ceniza. El menú: Sopa de huachal, tortitas de huachal y budín de mantecadas!!!!
